Cafe' Rio how I've missed you.

We had a whirl-wind trip this weekend. In three days time we saw lots of friends and family, attended my mom's musical review ( it was awesome by the way) and went to a wedding of one of my friends from Denver.

While driving the 8-plus hours, my mind was not thinking of all the people I was going to see, but the places I planned on eating. Lets face it. I have spent 8 months in a town where "The Coffee Cup" is the restaurant of choice. So, I started to plan. I knew I was really only going to be there for 2 meals, one of them being the wedding dinner. This was my plan.

Early lunch: Cafe' Rio
Lunch: Training Table
Early Dinner: The Italian place
Dinner: Eat at the wedding
Late night snack before leaving town: BYU creamery for a Sundae

But all of my plans went out the window when I was tempted at the temple by the smells drifting from the basement. We went down just for a snack before the wedding, and then I caved, and ended up eating a full blown chicken dinner with all the sides. I thought, "No fear, I can still eat at Cafe'Rio, but then the cobbler called to me. Before I knew it, I had eaten two dishes of cobbler. Needless to say, I never ate at Cafe' Rio.

So, I basically rolled out of the temple. I decided to give myself a small break before trying to tackle Cheese Fries and the ultimate dipping sauce. We ended up shopping too long and running to the wedding dinner. It was so good Pot roast and yummy sides. Good job Rigo family. Then my last hurrah. Jes came up to me and said. " Oh Jill, I thought of your sweet tooth when planning the cakes." Oh yes, four different kinds of wedding cakes and naturally, Jes wanted me to try them all.

I finally left Utah without eating at a single restaurant, but feeling oh so pleasantly full.

  1. I wish that I could send you some Rio and it would still be tasty, but you kind of have to eat it hot and fresh. Oh well, maybe next time, right?

  2. I have a recipe for the pork and also the salad dressing. If you are interested, I would be happy to send them to you. I've never tried them out, because.....well, why would I? I can go get the real thing and that take way less energy. And I am all about conserving energy.
